Pepper's BBQ Sauce

1/2 cup Bourbon Whiskey
1/2 onion
3 T minced garlic
5 T tomato paste
1 teaspoon Salt
1 Tablespoon paprika
2 Tablespoon black pepper
1 Tablespoon oregano
1 Tablespoon basil
2  teaspoon cumin
2 teaspoon chili powder
1 teaspoon chipotle powder
3/4 cup molasses
3/4 cup beef stock


Simmer whiskey, onions and garlic for 10 minutes. Add remaining ingredients and simmer 20 mins.

Barbeque Beef

3 lbs eye round roast
2 cups Beef Stock
1 t salt
1 Tablespoon Pepper
1 Tablespoon Oregeno
1 Tablespoon Basil
1 Tablespoon Bay leaves or 3 whole bay leaves
1 bottle of favorite bbq sauce. Or for home made recipe check this site under Pepper's BBQ Sauce

Place all ingredients in crock pot on low for 8 hours. Preheat oven to 350. Remove from crock and place into a cast iron pan. Shred into large chucks. Pour half bottle of BBQ sauce on Meat and put into oven for 30 mins. Place meat back into crock pot, add Reserved BBQ sauce to your liking to meat and serve.

Pumpkin Bread

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 3 cups white sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup water
  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans. Sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Set aside.
  2. In a large bowl, beat together sugar, oil, eggs, and pumpkin. Stir in flour mixture alternately with water. Divide batter evenly between the prepared pans.
  3. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. For best flavor, store wrapped in plastic wrap at room temperature for a full day before serving.

Mac and Cheese

  • 8 ounces uncooked elbow macaroni
  • 2 cups shredded sharp Cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups milk
  • 1/4 cup butter
  • 2 1/2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1/2 cup bread crumbs
  • 1 pinch paprika

  1. Cook macaroni according to the package directions. Drain.
  2. In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  3. Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  4. Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

Carne Chili

3 lbs Beef Rump Roast cut into bite size pieces
1 tsp salt
1 tsp pepper
1 Tbs olive oil
1 medium onion Finely chopped
1 jalapeno finely chopped
5 garlic cloves minced
1/4 cup red wine
1 Tbs Chili Powder
1 tsp Cayenne pepper powder
3 tsp onion powder
1 Tbs BBQ seasoning
1 Tbs Oregano
1 Tbs Basil
1 Tbs Paprika
1 Tbs Cumin
1 tsp ground clove
2 Chipotle peppers in Adobe Sauce
4 oz tomato paste
1 can Tomato Juice 48 oz
1 can diced tomatoes
3 cans of beans drained (We use pinto and great northern)


In Large skillet or pot on high heat brown beef with olive oil. Remove meat and place in slow cooker leaving juice behind. Heat onions for 5 mins. on medium high heat. Combine jalapenos and garlic to onions and cook 5 more mins. Combine tomato paste and tomato juice stir and heat on high til boiling. Place tomato mixture in Slow cooker and add all seasonings and chipotle peppers. Stir well. Add Beans stir carfully. Heat on high for 2 hours. Then reduce to low for 5 hours or until done and meat is tender.
