Dutch Apple Pie

Ingredients
1 home-made pie crust or 1 ready-made pie crusts
6 cups peeled cored sliced granny smith apples
1 tablespoon lemon juice
1/2 cup sugar
1/4 cup brown sugar, packed
3 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Topping
3/4 cup flour
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup butter or 1/3 cup margarine, room temperature

Directions
Preheat oven to 375°F.
Fit pie crust into pie plate.
In a very large bowl, stir sliced apples, lemon juice, both sugars,flour, cinnamon and nutmeg.
Pile into crust.
Prepare topping:.
In a bowl mix flour, both sugars, and butter until coarsely crumbled.
Sprinkle over apples.
Bake at 375°F for 50 minutes.

Broccoli & Beef

1lb flank steak Cut into strips
1 small head broccoli
3 tbs soy sauce
2 cups beef broth
1/2 cup Italian dressing
2 tbs olive oil
1 cup cold water
1 tbs. Corn starch
1/2 onion chopped
2 cloves garlic minced

Marinate steak in dressing for at least 15 minutes. Heat skillet with olive oil on Med/ high. Add garlic and onion. Saute for 2 min. Discard marinade from meat. Add meat to skillet, saute 8 minutes or till meat is done.  Mix cold water with cornstarch. Add beef broth and cornstarch water  to skillet. Heat to simmer. Add broccoli continue simmering low till brocolli is done.




Pinto Beans

1 lb pinto beans
2 quarts water
3 slices bacon
1/2 teaspoon salt
1 teaspoon pepper

Sort beans discarding any bad looking beans or dirt chucks. Soak beans in water over night. Rinse beans and place in dutch oven cover with water and heat to simmer for 1/2 hour. Slice bacon into 1/2 inch chunks and add to beans stirring gently. Cover and cook 2 hours. Once beans are tender add salt and pepper.


Served best with corn bread

Steak & Gravy

3 lbs round steak 1 inch thick
4 Tbs flour
1 tsp salt
1 tsp pepper
1 Tbs Italian seasoning
2 Tbs oil
1 can cream of mushroom soup
1/4 cup worcheshire sauce
2 Tbs Red Wine Vinegar
***optional 2 canned chipotle peppers (for the very SpiCy at Heart.)

Mix first 3 ingredients together in bowl. Coat steak in mixture. Pound steaks to 1/2 thick. Heat cast iron skillet to high heat with oil. Sear steaks. Mix rest of ingredents in bowl. Place steak and soup mixture in crock pot alternating. Cook on low for 8 Hours.
